
Weekly Theme: Salads!
I concocted this healthful spinach salad for my lunch and it was so “Simply Delicious” I am inspired to dedicate the entire weeks theme to salads!
In the bowl: Baby Spinach, Shaved Carrots, Chopped Walnuts, Pickled Beets, and Pinto Beans. It was “Simply Dressed” with fresh squeezed lemon juice and extra virgin olive oil. Of course seasoned with freshly cracked black pepper and just a pinch of kosher salt.
